Okay, I don't know of any exotic birds who can sleep while flying (though Exotic is an unknown species, so who knows what it can do), but I did hear that frigate birds can. They spend the majority of their time in the air, and migrate very long distances, so they have also developed the ability to sleep at the same time. Sure, they're technically gliding while they sleep, not flying, but it's still pretty neat.
